Method

  1. Roast the potato chunks with olive oil, salt, and pepper until golden and crisp at the edges.
  2. Flatten the chicken breasts to an even thickness, season well, then pan-fry until browned on both sides and cooked through.
  3. Rest the chicken for a few minutes while you make the sauce.
  4. In the same pan, warm the garlic briefly, then stir in creme fraiche, stock, pesto, and a splash of water. Simmer until glossy and lightly thickened.
